Recently got a bullet and it’s the best thing every created. All the food I would normally eat only no dishes and 4 minutes of prep. I should mention that I eat a lot more fruit because of this thing.

Spinach
Mixed nuts
Blueberries
Flax
Chia
Superfood powder
Whey protein
Banana
Oats
Almond milk
Grapes
Carrot

My wife’s got a bullet and a ninja but I don’t know how you’re supposed to use them.

You use that recipe as a recovery drink/meal?

You just stuff things in it and it blends it up and you drink it. You can look up recipes online or just go for it. I drink something like I posted 2-3 times a day. As a meal or supplement to one.

This has become my go to salad. Recreated a salad from SweetGreen. Arugula, cilantro, quinoa, roast curry cauliflower, grilled chicken thighs, pumpkin seeds, raisins, Sirachi chili sauce, olive oil, apple cider vinegar. I prep the cauliflower, quinoa and chicken on the weekend. Sounds more complicated than it is.

That’s what I was eating last night . I think my life is complete now, this is probably the biggest achievement of my cycling career.

Weekdays? I am an odd creature of routine. I get up at 4 to read and write, and I don’t eat until I get to school around 6:15.

At school (same every day):

2 Tempeh-spinach-pickle-shredded carrot-mustard sandwiches on whole wheat pita.
Clif Bar
Clif Builder Bar
2 peanut butter and banana sandwiches on multigrain bagels
1 Kind breakfast bar or PBJ on mutigrain bread.

Dinner these last few weeks has either oatmeal with banana, apple, and peanut butter, or tacos (if I have the time). Sunday dinner is always tacos. I love my tortilla press.

huevos mexicanos, beans, queso, on yellow corn masa tortillas

vegetable guisado, beans, queso on blue corn masa tortillas

I might do some migas this week. Going to make some sweet potato, black bean, and chard tacos tomorrow night.

Taking a look through my packed lunch today, and I brought with me

Kale (cooked with chicken stock, apple cider vinegar, garlic, and onions)
Roasted beets (cooked with onion and garlic, tossed in oil before roasting)
Avocado
Chicken breast (cooked in sous vide)
Broccoli (raw)
8 ounces of non-fat plain greek yogurt with blueberries (frozen) mixed in
Apple
Plumcot
Pear

It’s a day off the bike so my work calorie count is lower than it would be on a riding day

Dinner will likely be a large salad (spinach, cherry tomatoes, balsamic vinegar, tuna) and maybe a hard cooked egg and an avocado if I’m feeling hungry still

Uuuu… OMG! This is soo tasty!
I want!

Tried this last night. Low carb, it is is not.

Samosa filling:

  • Boil and mash 1 medium-sized potato (I didn’t peel).
  • heat 1 tbsp butter in a medium sized skillet
  • fry 1 tsp coriander seeds; 1/4 onion, 1 clove garlic, 1/2 jalapeno, an ~1/2 inch piece of ginger (all chopped).
  • add 1/2 cup peas
  • add the potato
  • blend in 2 tsp coriander, 1 tsp cumin, 1 tsp tumeric (not exactly legit, but what I felt like)

make tortillas (these were with white corn masa flour).

garnish with arugula, chopped tomato, queso fresco, cilantro.

Samosa Tacos,
